Good vegan cookbook with uncomplicated ingredients?

I went vegan for Earth Day 2010 (after 7 years of vegetarian) and had planned to only go for a week. Well guess what, I loved it! I am planning on staying vegan for a looooong time. My meals are fairly plain at the moment, so I need a better cookbook. Right now I own "Eat, Drink and Be Vegan" by Dreena Burton. I love some of the recipes, but it's difficult to find some of the ingredients. I don't like to eat very processed food (I just like to be healthy) and that cookbook has fake cheese, fake er etc. It also has healthy (but next to impossible to find in regular grocery stores) ingredients like Agave Nectar, Agar Agar, odd types of flour, etc. So what are some vegan cookbooks with healthy recipes and basic ingredients that are easier to find? Thanks so much for your help!
